crispy peanut butter fudge cookies

peanut butter fudge cookies

INGREDIENTS


  • 1 box Pillsbury sugar-free chocolate brownie mix
  • 1/3 cup water
  • 1 Tbsp unsweetened applesauce
  • 2 tsp vanilla
  • 1 egg
  • 2 Tbsp PB2 powdered peanut butter
  • 1/8 tsp ground cinnamon
  • 3 Tbsp mini semi-sweet chocolate chips
  • 2 cups Fiber One original cereal, crushed


INSTRUCTIONS


  1. Heat oven to 350°F.
  2. Spray cookie sheet(s) with cooking spray.
  3. Mix all ingredients in a large bowl.
  4. Drop by rounded tablespoonfuls onto cookie sheets, a couple inches apart.
  5. Bake 10 to 12 minutes until set.
  6. Cool 3 to 5 minutes.
  7. Remove from cookie sheets to cooling rack.
  8. Cool completely.
  9. Store in tightly covered container.
  10. Freeze up to 2 months if desired.
