Pumpkin French Toast

INGREDIENTS


  • 4 eggs
  • 1/2 cup pumpkin puree
  • 2/3 cup unsweetened almond milk
  • 2 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 12 slices reduced-calorie bread (I use Aldi Fit & Active 40-calorie wheat for 1 point per slice)
  • 1-1/2 cups Grove Farm sugar-free syrup (1/4 cup for each serving)


INSTRUCTIONS


  1. Spray skillet with olive oil spray and heat over medium heat.
  2. Mix first 6 ingredients in large bowl or square casserole dish.
  3. Dip bread in mixture, flip over, and then place on prepared heated skillet.
  4. Cook for 2 to 3 minutes on each side or until golden brown.
  5. Serve with 1/4 cup Maple Grove Farm sugar-free syrup (0 FSP)

(Serving size is 2 slices)
