blueberry pancake bake

INGREDIENTS

 

  • 2 cups Kodiak Cakes Buttermilk Flapjack mix 
  • 1-1/2 cups unsweetened almond milk
  • 1 egg 
  • 1/2 cup unsweetened applesauce (or 2 overripe mashed bananas)
  • 1 tsp ground cinnamon 
  • 1 tsp baking powder
  • 1 tsp vanilla extract 
  • 1 cup blueberries

INSTRUCTIONS


  1.  Preheat oven to 350 degrees
  2. Spray 13x9 pan with cooking spray.
  3. Mix everything but blueberries in a bowl.
  4. Fold in blueberries.
  5. Pour batter into prepared pan.
  6. Top with additional cinnamon (optional). 
  7. Bake in 350-degree oven for about 25 to 30 minutes.
  8. Let cool before serving.
  9. Cut into 6 squares.
  10. Top with additional blueberries, if desired.
  11. (Optional) Top with syrup or whipped topping (additional points/calories)
